My Favorite Salmon Sheet Pan Dinner

This is my favorite salmon dinner! It is so easy to make and you can always switch up the veggies!

Ingredients:

  • ½  lb of Brussel sprouts halved

  • 1 head of cauliflower, cut up

  • 2 (6oz) salmon fillets

  • 3 Tbsp dijon mustard

  • 3 Tbsp maple syrup

  • 4 cloves garlic, minced

  • 1 Tbsp lemon juice

  • 2 tsp Fresh Thyme

  • 1/4 tsp paprika

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400 degrees F. and line a baking sheet with parchment paper

  2. In a large bowl, toss the cauliflower with 1 Tbsp olive oil, 1 clove of minced garlic, and season with salt and pepper. Add to the baking sheet.

  3. Then, toss the Brussel sprouts with 1 Tbsp of olive oil, 1 clove of minced garlic, 1 tsp of lemon juice, and salt and pepper to taste.

  4. To make the maple dijon glaze, whisk together the dijon mustard, maple syrup, paprika, and the rest of the lemon juice, fresh thyme, and garlic in a small bowl or jar.

  5. Place the salmon fillets in the middle of the sheet pan. Brush the tops of the salmon with the glaze so each piece is evenly coated and season with salt and pepper. 

  6. Cook in the oven for 15 minutes, plate and enjoy!
