Spaghetti Squash Burrito bowl

This recipe is such a yummy take on a “burrito bowl”. You can change up this recipe to incorporate your favorite burrito toppings as well or use a different source of protein. I love making extra burrito mixture to use in other meals or to keep some to top on nachos for a fun Sunday Football shareable!

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients

  • 1 spaghetti squash

  • 1 lb lean ground chicken

  • 1 onion, diced

  • 2 tablespoons 

  • 1 teaspoon ground cumin

  • 1 can of corn, rinsed and drained

  • 1 can of black beans, rinsed and drained

  • 4 oz cherry tomatoes, halved 

  • 3 Tablespoons of your favorite Salsa 

  • 2 Tablespoons Chili Powder

  • Salt and pepper to taste

  • 3 Tablespoons fresh cilantro, reserve some for garnish

  • Shredded cheese to top

  • Avocado to top

Directions

  1. Preheat the oven to 400 degrees F.

  2. Cut your Spaghetti squash in half, and scoop out the seeds. Line a sheet of parchment paper on your baking sheet. Place your spaghetti squash on the baking sheet and rub 1 tablespoon of olive oil on the spaghetti squash, both sides.

  3. Place the spaghetti squash in the oven and bake for 20-30 minutes (Depending on the size of your squash you may need to bake longer or shorter)

While the squash is in the oven, begin cooking the ground chicken.

  1. On medium-high heat, add 1 tablespoon of olive oil to a pan on the stove. Once the olive oil is hot, add your diced onion and cook until fragrant. Then add your ground chicken.

  2. Continuously break apart your chicken until the chicken is cooked (about 7-9 minutes) add the chili powder, cumin, salsa, and salt, and pepper. Stir until all of everything is evenly mixed.

  3. Add your corn, black beans, cherry tomatoes, and cilantro. Mix everything in the pan well and remove from heat. 

  4. When the spaghetti squash is cooked, use a fork to scrape the spaghetti off of the sides and break it apart.

  5. Add about a cup of the ground chicken mixture from the pan to one of the squash halves. 

  6. Sprinkle it with shredded cheese, cilantro, and avocado slices, and enjoy!

Note: I make a full pound of ground chicken to use with other meals throughout the week. Additionally, you can cook more spaghetti squash if you are cooking for others as well!
