Veggie Shrimp Fajitas

A fajita recipe that will turn into a weekly staple! This one-pan recipe is so simple to cook up and it’s packed with lots of yummy flavors!

Ingredients:

1 lb shrimp deveined, peeled, and pat dry

2 tbs olive oil

1.5 Cups Sliced Baby Bella Mushrooms

1 Medium Red Onion, Thinly Sliced

1 Red Bell Pepper, Sliced

1 Green Bell Pepper, Sliced

1 lime

Tortillas, warmed

Optional: Sour Cream, Avocado, Cilantro, and Lime, For Serving 

For the Fajita Seasoning:

2 tsp. Chili Powder

1 tsp. Garlic Powder

1 tsp. Onion Powder

1 tsp.  Ground Cumin

1/2 tsp. Oregano

1/2 tsp. Paprika

1/2 tsp. Black Pepper

3/4 tsp. Salt

Directions:

  1. In a small bowl, combine all of the fajita seasoning ingredients.

  2. Heat 1 tablespoon of olive oil over high heat in a large pan. 

  3. Add onions, bell peppers, mushrooms, and 1/2 of the seasoning mixture. Cook for about five minutes, or until veggies are tender. 

  4. Push the veggies to the side of the pan to make room for the shrimp.

  5. Add remaining olive oil to skillet, followed by shrimp and remaining seasoning mixture.

  6. Saute shrimp until pink and cooked through. 

  7. Squeeze juice from one fresh lime over the ingredients in the pan. Serve in warm tortillas and enjoy with your favorite toppings!
