BISON SWEET POTATO SLOPPY JOE’S
Ingredients:
1 lb ground beef of choice ( bison, ground beef, turkey, etc)
4 sweet potatoes
2 green peppers
1 white onion
1 10 oz can tomato sauce
2 tbs tomato paste
3 tbs brown sugar
1 tbs yellow mustard
2-3 green onions
salt and pepper to taste
Directions:
Preheat oven to 400 F. Wash and pierce each sweet potato with a fork and microwave for 6 minutes. Place on to a sheet and bake for 25 minutes. In a pan, add the diced onion and green bell pepper to 1 tbs of olive oil and cook for 2-3 minutes. Add in the ground meat and cook for 5-7 minutes on medium high heat. Add in the tomato sauce, tomato paste, brown sugar, and yellow mustard and mix together. Let the mixture simmer for 5 minutes. Cut open the sweet potatoes and spoon the meat mixture into the sweet potatoes. Top with green onions.
