BISON SWEET POTATO SLOPPY JOE’S

It’s fall enough.

Took full advantage of moving away from 90 degree Septembers to fully submerge myself into fall. See recipe below for one of my favorite, easy fall performance plate recipes to fuel with that has countless benefits to the athlete.

Ingredients:

  • 1 lb ground beef of choice ( bison, ground beef, turkey, etc)

  • 4 sweet potatoes

  • 2 green peppers

  • 1 white onion

  • 1 10 oz can tomato sauce

  • 2 tbs tomato paste

  • 3 tbs brown sugar

  • 1 tbs yellow mustard

  • 2-3 green onions

  • salt and pepper to taste

Directions:

Preheat oven to 400 F. Wash and pierce each sweet potato with a fork and microwave for 6 minutes. Place on to a sheet and bake for 25 minutes. In a pan, add the diced onion and green bell pepper to 1 tbs of olive oil and cook for 2-3 minutes. Add in the ground meat and cook for 5-7 minutes on medium high heat. Add in the tomato sauce, tomato paste, brown sugar, and yellow mustard and mix together. Let the mixture simmer for 5 minutes. Cut open the sweet potatoes and spoon the meat mixture into the sweet potatoes. Top with green onions.
