Million DOLLAR Chicken Bowl with Sesame Dressing

This bowl is truly a summer essential to make a quick, fast delicious performance plate ( or bowl).

You can make it as quick, or as personalized as you would like. Protein options can vary from marinated chicken breast ( as shown in photo) to rotisserie chicken to crispy tofu. For the energy providing element ( CARBS baby) you can go noodles or even quinoa. OPTIONS galore! Not to mention this sesame sauce if full of really critical electrolyte, SALT!

For the Bowl:

  • 1 bag of slaw mix ( I did cruciferous crunch from Trader Joes)

  • 4 cups or 1 lb chopped or shredded chicken ( or protein of choice, I’ve done with crispy tofu too!)

  • 2 cups or 8 oz dry grain of choice ( I’ve done quinoa but used Trader Joe’s wheat Thai noodles here!)

  • 1 cup of something crunchy : fried wonton strips, crispy fried onions, crushed-up dry ramen noodles, or I used Trader Joe’s sesame sticks

  • 1 tablespoon of sesame seeds (optional)

For the Dressing:

  • 1/2 cup avocado oil

  • 1/2 cup maple syrup

  • 3 tablespoons apple cider vinegar

  • 2 tablespoons soy sauce

  • 2 tablespoons sesame oil (to taste)

  • salt to taste

Directions:

Prepare chicken as preferred and grain according to package. While cooking, prepare dressing contents in small bowl. Place slaw mix in large bowl, and mix dressing into large bowl with slow mix and massage for at least 2-3 minutes. Add cooked grain and spinach. Top with crunchy item and seeds. Enjoy!
